Fresh Peach Pie with Cream Cheese Filling

Today I’m sharing my homemade Fresh Peach Pie with Cream Cheese filling. This is another one of my husband’s grandma’s recipes and is essentially the same pie as the Strawberry Cream Cheese Pie that I’ve shared here.

Grandma Jolley made the best pies, and her fresh peach pie with cream cheese filling is one of our family favorites! Everyone will love this pie, and it’s very easy to make!

The Recipe

 I use pie weights or navy beans on top of parchment paper to keep the pie crust from sliding down in the pie dish and to keep the dough from bubbling up. I also use a pie crust ring to keep the edges from burning. I’ve added the pie crust recipe below too. (Or you can cheat as I often do and use a store-bought crust)

Fresh Peach Pie with Cream Cheese Filling

This is a fresh peach pie that has a cream cheese filling with almond extract in the bottom of the pie shell then topped with peaches in a peach glaze.

Ingredients

• 8 peaches washed and skins removed
• 1 pint Peach Glaze (Marie Calendars is what I use.)
• 8 oz Cream Cheese softened
• 4 TBSP Milk
• 4 TBSP Sugar
• 2 tsp Almond extract

Instructions

• Fill a large pot with water and bring to a boil. Gently set the peaches in the boiling water for one minute. Take out and immediately put into a cold water and ice bath to cool.
  8 peaches
• The skins should peel right off after blanching. Once the peaches are peeled, cut them in half and remove the pit then dice into small 1" pieces. Then toss the peaches in the peach glaze and set aside.
  1 pint Peach Glaze
• In a stand mixer or with a hand blender, whip the softened cream cheese, sugar, milk, and almond extract together until smooth. You may need to scrape the bowl down and whip again to get all the lumps out.
  8 oz Cream Cheese, 4 TBSP Milk, 4 TBSP Sugar, 2 tsp Almond extract
• Take the cream cheese mixture and spread it evenly on the bottom and part way up the sides of a baked and cooled pie shell. Then add the peaches and glaze mix over the top of your cream cheese mixture.
• Refrigerate for an hour or more. Serve chilled.

Grandma Jolley’s Favorite Pie Crust

Cook Time 13 minutes minutes

Total Time 43 minutes minutes

Servings 8 people

Ingredients

• 2 ½ cups flour
• 1 tsp. Salt
• ¼ cup cold water
• 1 TBSP white distilled vinegar
• 1 egg
• 1 cup Crisco or Butter

Instructions

• In a large mixing bowl, sift the 2 ½ cups flour and 1 tsp. Salt together. Then using a pastry blender, mix the 1 cup Crisco or Butter together with the flour mixture until it becomes a little crumbly.
• In a separate bowl, mix the ¼ cup cold water, 1 TBSP white distilled vinegar, and 1 egg together. Slowly add liquid ingredients to the flour mixture using your pastry blender. Once incorporated well, use your hands to mix together and form 2 equal-sized balls out of the dough for each of the pie crusts.
• Sprinkle a little flour onto a clean, dry surface and gently roll out the pie dough a little less than ¼ of an inch.
• Roll the dough back up on the rolling pin. Lay it on the edge of your pie dish and unroll it right on top. Gently push the pie dough into the pan and then trim the edges about 1 inch below the edge and then fold under and pinch together with your fingers to form a nice edge.
• Poke holes in the crust with a fork and bake at 400 degrees for approximately 13-16 minutes. The crust should start to turn to a light brown color. Take out of the oven and cool on a wire rack for about 20-30 minutes.

Holly’s Helpful Tips

*When baking any pie crust shell, use dry beans or ceramic pie weights. Put a layer of parchment paper on top of the crust, and lay the beads on top. Put them in the pie shell before you bake and it will keep the pie crust from shrinking or sagging.

*If you don’t have the ceramic pie weights, you can use dry beans.  I have done it both ways.

*Use a fork to poke holes in the bottom and sides of the crust before you put the dry beans or ceramic pie weights in. This keeps the pie crust from bubbling up!

*Be careful not to overwork the dough. You want the pie crust to be flaky!

*I like to add a little more almond extract than the recipe calls for because my husband loves it that way, but if you’re a purist, stick to Grandma’s recipe!

*You can freeze half of the dough if you are only making one pie. The dough can get really sticky and soft if out too long after making and if it’s warm.  I find it’s easier to refrigerate the dough if I have time. The store-bought crust can be helpful if you don’t have a lot of time.

*Use Marzetti or Marie Callendar’s strawberry fruit glaze. Don’t use Danish dessert or packaged mix.  These two are the best to use from our experience!

*Don’t use low-fat cream cheese. Use the regular kind. It won’t turn out if you use the lower-fat version.

*I like to use a pretty pie dish to bake my pies in.  If you use the frozen pastry shell you can still put that into a pretty pie dish if you are entertaining and like it to be all pretty!

Summertime Barbecue Recipes and Entertaining Ideas

One of my favorite things about summertime is having a family barbecue so today I’m sharing some of my favorite Summertime Barbecue Recipes and Entertaining Ideas for hosting your own backyard barbecue. Summertime is all about good food and good times with family and friends!

Planning the Menu

I have so many great recipes that are perfect for a summertime backyard barbecue and I’m sharing some of my favorites here. I like using the freshest, high-quality, organic ingredients when possible as I think that makes everything taste better! For this barbecue, I made my famous baby back ribs, baked beans, fresh peach pie with cream cheese filling, my caramel cream cheese fruit dip and fresh fruit, corn on the cob, chopped green salad with a lemon and olive oil vinaigrette, sugar cookies, and limeade for the drink.

On the morning of the barbecue, I went to my favorite store Fred Meyer to get everything I needed for the barbecue. I love Fred Meyer because it’s a one-stop shop. Not only can I get high-quality produce, meat, and organic ingredients, but I was able to get everything else I needed there too, including flowers!

I always like to have flowers on my table when I’m hosting a party or gathering and Fred Meyer has a great selection of flowers. On this particular visit to the store, the lady working in the floral department helped me find the perfect flowers for my summer table.

I also needed a new basting brush for the ribs and found the perfect one in the kitchen section of the store. Some of my favorite sets of dishes and entertaining items are also from Fred Meyer. I always find myself taking a stroll through the dish section! (See these posts for some of my Fred Meyer dish sets here and here)

I am a very busy person (aren’t we all!?) and hosting a gathering can be a little overwhelming so when I can get everything I need in one store, it’s a win-win!

The Private Selection brand is my favorite line of products in Fred Meyer and I use them all the time. They also have their in-house Kroger brand which is also high quality and affordable.

You can find almost everything you need in the Kroger brand family. Fred Meyer promises freshness and quality in all their products. Whether it’s meat or produce, Fred Meyer has everything you need for your summer grilling and entertaining.

Another thing that I really like is how Fred Meyer makes it so easy to shop. They offer easy pickup and delivery options for you to get all your groceries and supplies in one place. This makes hosting at home so much easier. Man oh man do I wish this had been an option when I had little kids!

I often order my groceries online and do the pickup option. I don’t even have to get out of my car! When it’s raining in Seattle, which it is often, this is the best thing ever!

Summertime Entertaining Ideas

When it’s really hot outside, I like to set up my serving table inside the house where it’s cool during the summer months. We don’t have a lot of shade in our backyard at our home in Utah and it gets quite warm in our backyard. When I do a barbecue at our home in Washington, we have a fully shaded backyard so it’s much easier to set up outdoors. Either way is great, so do whatever is best for your circumstances.

Even though many of our summer plans have been put on hold, we can still gather at home with those closest to us and enjoy the delicious food that is in season. Making home-cooked meals and gathering as a family is the perfect way to pass the time and make some great family memories.

As I mentioned above, I like to add flowers in matching vases onto the serving table and create different heights. In this photo here you can see that I used an old wooden crate riser to set the flowers and serving utensils higher on the table.

I like to use a decorative utensil caddy for the silverware, matching serving bowls and platters. Another fun way to serve the drinks is in a decorative drink dispenser. Get creative by adding a table runner or tablecloth to match.

For this set up I used a navy blue table runner down the middle of the table and went with all-white and blue serving dishes. The yellow sunflowers added a pop of color.
