Preheat your oven to 325°F (165°C).
Season the beef roast generously with salt, pepper, and seasoning salt, rubbing it into the meat with your hands.
In a large roasting pan over medium-high heat, heat the oil until hot. Place the seasoned beef roast in the skillet and sear it on all sides until browned, about 5 minutes per side.
Place the lid on the roasting pan and place in the preheated oven. Roast the beef for about 2½ -3 hours, or until the beef becomes tender and starts to fall apart.
Remove the beef roast from the oven and place the roast beef on a platter or large plate and cover with the roasting pan lid. Allow the meat to rest while you make the gravy from the pan drippings. I prefer to pull my roast beef apart with a fork but you can slice it into pieces if you prefer. Save the drippings in the pan to make the gravy. I'll link the gravy recipe below.
I like to serve my roast beef dinner with my homemade brown gravy, mashed potatoes, and brown sugar butter carrots or a side of sweet corn. I also like to make my homemade rolls or braided bread when I have time. All these other recipes are linked in the blog post.
