Thats so great to hear you make this as well. My recipe is also from my great grandma and she would make her noodles homemade. My mom and grandma always used the store bought ones I mentioned and they are pretty good but I would love to try the homemade ones too! Would love your recipe for those if you would be willing to share! I wish that had been passed down to me with the other part of the recipe. Thanks for sharing all that with me!

From West Virginia here. This is a old family recipe for me too. My grandma was from Germany. She taught my mom and she taught me. This is my families favorite comfort meal. We ONLY use homemade noodles as using store bought loses that richness that comes from the flour that stays on the noodles to create the thicker consistency for the gravy. We don't like ours too thick though. Kind of between broth and gravy texture. I like to roll my dough thin, roll it up and cut into strips then separate the noodles with the flour. This is also super easy and really elevates the flavor. Your recipe seems ok, but going the extra step is worth it. It really makes a HUGE difference. Making this today. I love your story behind your recipe. Mashed potatoes is the only way to go for this chicken and noodles dish!!

Oh it is amazing! When I first get it boiling I do sometimes to get it going faster but I typically don't put a lid on it since you want the liquid to boil down a lot so the stock is more concentrated.

Its whatever size you can find. The weight doesn't matter and if you are boiling and simmering it, you can't really overcook it. Just simmer it until the meat starts falling off the bone. At least 2 hours.

Hi, Sorry I just saw this comment. I'd ask your grocer if they have the frozen egg noodles as they are often hard to find. If they don't have either the Grandma's or Reames brand frozen egg noodles then you could make some homemade egg noodles or the packaged ones you mentioned. They don't take as long to cook because they are thinner so I'd just cook them 10-15 minutes until they are al dente. Pull some out and test them for doneness if you want to be sure!

Quick question. Can I use packaged egg noodles? I couldn't find the frozen ones. If so, how long should they cook in the stock?
Can't wait to try this!
